 Tomato and Basil Pesto Chicken

  Makes: 4 servings
  Prep Time: 5 minutes
  Total Time: 40 minutes

  2 chicken breasts split (see tips)
  4 tablespoons basil pesto
  2 tomatoes sliced (8 slices total)
  1 cup grated low fat mozzarella

  1. Preheat oven to 350°

  2. Place 4 chicken portions in the bottom of a casserole dish. Spread 1 tablespoon of pesto on each portion of chicken. Place 2 slices of tomato on each portion. Divide grated mozzarella among the 4 portions.

  3. Bake for 30 minutes.  Serve on a bed of greens and with a side of carrots.

 Tips & Tricks
  Tip: To fillet a chicken breast, lay it flat on a flat surface and hold it flat with one hand on top.  With a sharp knife cut through the chicken breast horizontally so you end up with 2 equal portions.
