 Smokey Pressure Cooker Pulled Pork

  Makes 8 servings, 1 cup each
  Prep Time: 5 minutes
  Total Time: 1 hour 30 minutes
  Ease of Preparation: Easy

 Ingredients
  2- 1/2 lbs pork butt
  1 teaspoon liquid smoke
  1/3-1/2 cup BBQ sauce of your choice (we like hickory smoked)
  Water

 Preparation
  1. Put pork in to pressure cooker you may need to cut it so it will fit into the pressure cooker.  Add water to cover and the liquid smoke.  Be sure you do not go over the full line.

  2. Bring the pressure cooker up to pressure and cook at pressure for 1 hour.  After the hour take it off the heat and let it depressurize by itself.

  3. When it has cooled so you can handle it, take the meat out of the pressure cooker and shred with 2 forks.  Add the BBQ sauce so it is a consistency and taste you like.  Enjoy this yummy dish!
