Sesame Ramen Salad

  Makes 10 servings
  Prep Time: 20 minutes
  Total Time: 2 hours (including 1.5hours for cool down)

 1 head of cabbage (sliced or shredded)
 ¼ cup olive oil
 2 pkg Ramen noodles, broken up pretty small
 ¼ cup sesame seeds, lightly toasted
 1 cup almonds, sliced

 ¼ cup sugar
 ¼ cup rice vinegar
 ¼ cup sesame oil
 ½ cup peanut oil (or canola)
 2 tablespoons light soy sauce

1. Shred cabbage, set aside.

2. Sauté all ingredients, except cabbage being careful not to burn the noodles.

3. Cool the sautéed mixture, then combine with the cabbage.

4. Bring all the dressing ingredients to a gentle boil, until sugar dissolves, mix into salad.

5. Serve cold.
