Roasted Chicken
This is a family favorite and very easy to do. Roasting is the simplest way to cook a whole chicken. Makes 4 to 6 servings Prep Time: 10 minutes Total Time: varies on size of bird Ease of Preparation: Easy
Ingredients 1 (4 to 5 lbs) Whole chicken 1 tablespoon Lime juice salt and pepper to taste ½ teaspoon paprika 2 tablespoons margarine Preparation
1. Preheat oven to 350.
2. Remove giblets from cavity of chicken. Rinse chicken well inside and out. Pat dry and remove any excess fat around cavity.
3. Rub lime juice over skin and inside cavity. Sprinkle with salt, pepper and paprika. Lay a few dots of margarine on the back and legs.
4. Place on a rack in a roasting pan.
5. Roast for 20 minutes per pound or until juices run clear when skin under thigh joint is pricked with a knife. Tips & Tricks Tip: Fat and calorie content can be reduced by draining cooked chicken of thigh and cavity juices and removing skin prior to serving.
