Rainbow Salad

  Makes 8 servings, 1 cup each
  Prep Time: 15 minutes
  Total Time: 20 minutes

Ingredients
 1 ½ cups red and yellow bell peppers, diced
 1 ½ cups broccoli florets, chopped
 ½ cup celery, diced
 1 cup garbanzo beans, drained and rinsed
 1 cup artichoke hearts, drained and rinsed, chopped
 1 cup green beans
 1 cup shredded carrots
 ½ cup radishes, diced 
  1 tablespoon red onion, minced
 ¾ cup Orange and Oregano Dressing (recipe in Salads and Dressings) 
 

Preparation
Place above ingredients in a medium bowl. Add dressing and toss to coat. Refrigerate until ready to serve.

Tip: You can also use convenient bottled dressings like 'lite Italian'.
