Mediterranean Quinoa Salad

This quinoa salad has a hint of lemon and a healthy dose of fresh herbs. Save any leftovers to wrap up for an easy lunch.

  Makes 4 servings (1 cup)

  1 cup water
  1/2 cup quinoa
  1 cup chopped fresh parsley
  1/2 cup chopped fresh mint
  1/4 cup lemon juice
  3 tablespoons extra-virgin olive oil
  2 teaspoons minced garlic
  1/8 teaspoon salt
  1/8 teaspoon freshly ground pepper
  1 medium tomato, chopped
  1 cup chopped cucumber

1. Bring water to a boil in a small saucepan. Stir in Quinoa and cook according to package directions. Fluff with a fork. Set aside.

2. Meanwhile, combine parsley, mint, lemon juice, oil, garlic, salt and pepper in a small bowl.

3. Stir the parsley mixture into the Quinoa along with tomato and cucumber.

Serving Suggestion
Serve on a mixed bed of greens or in a radicchio cup with a glass of crisp white wine.
