Hearty Soup Starter Mix

 Contents of jar:
Ingredients: barley, split peas, lentils, small pasta, dried minced onions, wheat berries, wild rice blend (Lundberg ‘Wild Blend Rice’: long grain brown rice, sweet brown rice, wild rice, whole grain Wehani rice, whole grain black Japonica rice)


 Makes 8 servings (per 1 cup of mix), 2 cups each
 Prep Time: 10 minutes
 Total Time: 2 hours
 Ease of Preparation: Easy

   6 cups reduced sodium, low fat broth
   1 cup Hearty Soup Mix
   2 carrots, sliced
   2 stalks of celery, chopped
   1 ½ cups of kale, chopped
   2 (15oz) cans of low sodium diced tomatoes
   24 oz low sodium vegetable cocktail juice (like V-8)
   1 lb ground beef or turkey, 93% lean (or leftover meat)

1. Put broth in a large kettle or dutch oven.  Add 1 cup of Hearty Soup Mix and bring to a boil.  Cover and simmer for 1 to 1 ½ hours.
 2. Add carrots, celery and kale, diced tomatoes (or your favorite vegetables) and vegetable cocktail juice.  Add meat if desired.  
3. Simmer for 20 minutes more until vegetables are cooked.
