Fresh Peach Salsa

  Makes 7 - ½ cup servings

   3 1/2 cups diced peeled peaches (about 2 1/2 pounds)
   1/4 cup diced red onion
   2 tablespoons finely chopped fresh cilantro
   1 tablespoon minced seeded jalapeño pepper
   2 tablespoons rice vinegar
   1 teaspoon lemon juice


Combine all ingredients in a bowl, and stir well. Cover and chill.
