French Market Soup Starter Mix
 
 Contents of jar:
Ingredients: navy beans, pinto beans, Great Northern beans, split peas, yellow split peas, black-eyed peas, lentils, baby lima beans, barley, red beans

 Recipe:

 Makes 8 servings, 2 cups each
 Prep Time: 10 minutes (plus overnight soak – optional)
 Total Time: 2 hours 30 minutes

 Ingredients:
1 quart water
1 quart low sodium broth of your choice
1 ham hock or ham bone (or leftover meat)(optional)
1/4 teaspoon ground pepper
1 (16 ounce) can diced tomatoes with green chiles
1 large onion, chopped
1 clove garlic, minced

 Preparation:
Soak 2 cups French Market Soup Starter Mix in water to cover, 8 hours or overnight (soaking optional). In a large pot, bring water, broth (and ham hock if using meat) to a boil. Reduce heat and simmer 20 minutes. Remove ham hock, skimming foam off the top.
Stir in beans, pepper, diced tomatoes with green chiles, onion and garlic. Bring to a boil again. Reduce heat, cover and simmer about 2 hour, until beans are tender, to your liking.
