Easy Tomato Vegetable Soup

This is a quick soup made by combining canned tomato juice, vegetable broth and oregano with a bag of mixed frozen vegetables.

   16 fluid ounce low sodium tomato juice
   1 cup low sodium vegetable broth
   8 ounce package frozen mixed vegetables
   1 pinch dried oregano or Italian spices
   Salt and pepper to taste 


In a sauce pan over medium heat combine the tomato juice, vegetable broth, mixed vegetables, oregano or Italian spices and salt and pepper to taste. Allow to simmer for 30 minutes.

Tips & Tricks:
Tip: To make this soup a meal, add some cooked ground meat and whole grain pasta.
