Black Bean Salsa

This is a great all year round and keeps well in the fridge for 3 or 4 days.

  Makes 12 servings, ½ cup each
  Prep Time 15 minutes
  Total Time: 15 minutes

  1 15 oz can reduced sodium black beans, rinsed and drained
  1 ½ cups frozen corn thawed
  2 cups salsa (like Fiesta)
  ¼ cup black olives, chopped
  ¼ cup sweet onion, chopped
  ¼ cup fresh cilantro, chopped
  1 tablespoon lime juice
  1 cup grape tomatoes, quartered


Put all ingredients in a large bowl and mix well.

Tips & Tricks
Tip: Add more grains to your diet and add 1 cup of cooked wheat berries or barley
