 Balsamic Roasted Vegetables

  Makes 6 servings, 3/4 cup each
  Prep Time: 10 minutes
  Total Time: 1 hour

 Ingredients (see Tips)
  1 cup carrots
  ½ cup broccoli
  ½ cup cauliflower
  1 cup butter nut squash
  ½ cup onions
  ½ cup rutabaga
  1 cup parsnips
  ½ cup potatoes
  ½ cup turnips
  cooking spray
  3 tablespoons Balsamic vinegar
  Pinch of salt and pepper

  1. Prep the veggies and spread them out into a single layer in a baking dish or roasting pan.   Spray the vegetables with cooking spray and sprinkle with Balsamic vinegar. Sprinkle with some salt and pepper. Give the veggies a quick toss to evenly coat.

  2. Roast in a 375° oven for about 30 – 45 minutes, until tender. Serve immediately.

 Tips & Tricks
  Tip: Cut all vegetables into bite size pieces.
  Tip: You can do as many or as few vegetables as you like depending on your needs, I make extra and keep in the fridge for snacks.
