Avocado and Mango Salsa

  Makes 3 cups or 12 - 1/4 cup servings

Ingredients
 1 ripe avocado, peeled and diced
 1 cup chopped ripe mango (see Tip)
 1 jalapeño pepper, seeded and finely chopped
 1/2 cup chopped jicama
 Juice of 1 lime (2 tablespoons)
 Salt and ground pepper
 1/4 cup cilantro leaves, chopped

Preparation
In a mixing bowl, combine the avocado, mango, jalapeño pepper, jicama, and lime juice. Season to taste with salt and pepper. Mix in the cilantro. Let the salsa sit 20 minutes for flavors to meld before serving.

Tips & Tricks
Tip: To dice a mango:
1. Slice both ends off the mango. Set the fruit upright on a work surface and remove the skin with a sharp knife.

2. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces.

3. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side.

4. Cut the fruit into the desired shape.
